Creole chicken wings, smoked sausage, mint lime and ginger chutney and green papaya salad.
12 chicken wings
2 Limes
Thumb of Ginger
2 cloves of Garlic
1/2 tsp turmeric
1/2 tsp curry powder
Glug of olive oil
First off marinate the chicken wings in lime juice, grated ginger, grated garlic, turmeric, olive oil and curry powder. Rest for 30 minutes while the oven gets to 160 degrees Celsius, fan. During this time, prepare the salad by julienning a green papaya and a couple of carrots, or using a mandolin with the right attachment. You can also just use a decent cooks knife if you have the knife skills. Wizz up a chutney using half a carrot, half an onion, one glove of diced garlic, 2 birds eye chillis, handful of mint, juice of a lime and it’s zest, glug of olive oil, glug of cider vinegar and a thumb of ginger, salt and pepper. The chicken and sausage will now be ready for the oven, cook for 45 mins. When ready put a tablespoon of the chutney in the salad and combine. Plate up and serve…
